It is back to school time again and like me, I am sure many parents out there face the same challenge in beating the Lunchtime Blues – yes, the challenge of making innovative delicious lunchtime snacks for your little ones that will make them smile. I spent many long hours scouring the internet for inspiration, but to no avail, either the recipes were too complicated, time consuming or expensive, until I found this little jewel of a website – Kraft Cookin’ Up Good.
I came across it while I was doing another futile search on the internet for inspiration and after a quick look at the landing page I saw an interesting and easy snack idea that I thought I should give a try at re-creating – Kraft’s Mountains and Forest Sandwich, called that because the final product resembles Mountains and a Forest. The recipe brings a new meaning to hotdog sandwiches, bringing life, fun and playfulness to the usual yummy sandwiches. It turned out a great success and because it is so quick and easy I thought, I would share it and save someone else from the Lunchtime Blues.
The ingredients that follow are for one serving only; you can use it as a framework to make as many Kraft’s Mountains and Forest Sandwiches as you need:
- Kraft Singles
- Piller’s Oven Roasted Chicken Breast
- Hot Dog Bun
- Tablespoon MIRACLE WHIP Dressing
- Chinese Parsley Coriander
Once you have all your ingredients at hand, the fun magic can happen – I call it magic because once you are done with it and your little ones see your creation in their lunchbox it would be like magic when they smile. First, you need to take the Kraft Singles and 2 pieces of chicken breast and cut them in half, using a sharp knife, by making zigzagging cuts into each piece of Singles and chicken breast.
When you are done with all the cutting, you can move onto the next step that can become a bit messy if done in a rush. Cut the hot dog bun open horizontally and spread the Dressing evenly on the bun with a knife or spoon – whichever you find easier – ensure that you cover it completely.
Then for the last and most fun step of all, fill your hot dog buns with the Chinese Parsley Coriander, Singles and Chicken Breast – arranging them that they simulate a forest and mountains. You can arrange it in any way that you feel looks the best, be it mountains in the front or the Forrest.
Now you are done with your Kraft’s Mountains and Forest Sandwiches and probably thinking, this solves my problem for only a little while. Well, not only is this an easy recipe but it can also be adapted to provide a nice change to taste, for example, of using the pieces of chicken breast, you can substitute it with original OSCAR MAYER Bologna or OSCAR MAYER Light or Ostrich Bologna or serve it with Cherry / Grape Tomatoes, CAPRI SUN 100% Juice and a JELL-O Gelatin snack.
