Coming up with a dinner that will make everyone in a family of six happy can be nearly impossible, but if your family likes chicken, rice and a mild sauce, they should love this, it’s super easy to make and the entire family can help.
1 tblsp of olive oil
1-1.5 lbs of chicken tenders cut up into 1 inch pieces
1 medium onion sliced
1 tblsp of chili powder
1.5 tsp of dried oregano
1 tblsp flour
3/4 cup of plain yogurt
2 tbls of lime juice
salt and pepper to taste
1.5 cups minute white rice
1 cup water
1 cup of your favorite mild salsa
1 cup shredded sharp cheddar cheese
In a bowl mix chili powder, oregano, flour, yogurt, lime juice and salt and pepper and separate in half.
Let oil get hot over med heat and cook sauce (you just prepared)and chicken until done.
Add onion, the remainder of sauce and cook just until onion has softened.
Stir in Rice and water, bringing to a boil.
Stir in salsa, add shredded cheese, stir, remove from heat and let stand for 5 minutes.
The recipe is super easy to make, my 8 year old daughter helped with most of it. I love being able to let my children help create dinner because food tastes amazing when it’s made with love (plus it’s something they helped create which makes it so special)!
